Can anyone help me, if it is possible somehow to set a customer consent for a recording via an API? One of my clients is trying to have a case, where a conversation is transferred from one channel or system to another and their customers do not need to acknowledge recording consent every time they are transferred by a bot.

No it is not possible to set customer consent via API at this time.
There is this Genesys Cloud Idea: Public API support for EnableParticipantRecording
