We have recently discovered that the default token cache expiry is 1 hour, apparently this is not configurable within PureCloud.

This is an issue for us because our current token expiry is set to 24 hours, which means that PureCloud would request roughly 24 new tokens each day.

Please can you look into allowing customers to configure the TTL on the token cache?

The max token duration can be configured when creating/editing your OAuth client. See step 6 here: https://help.mypurecloud.com/articles/create-an-oauth-client/.
