Is the waiting Metric deprecated or available?
You didn't provide enough context for me to be clear what you were asking.
The oWaiting metric is not deprecated as far as I know, but it's only usable in Conversation Observation APIs.

It is still unclear what you are asking and why (deprecated??).
The link you reference is about UI - Views and Dashboard - the name of the metric appearing in the view.
See here - this link is referenced at the bottom of the page.
If your question is at API level, the list of available metrics (and their names within API) is still at the same place: Metrics.
