Anyone here have experience with saving and serving the necessary Chat Widget cxbus.min.js & related javascript files from their own site? We foresee some security concerns around having js files served from a CDN.

That's usually not an issue. I can't speak specifically for cxbus.min.js
but our team has served a JS library from our own CDN to avoid relying on a third party without a problem.

It is not a problem to host the different widgets javascript files on your web server.
Before availability via CDN, this is how customers used to make the Genesys Widgets available with the Genesys Engage platform (a different platform - on premises - than Genesys Cloud) as Genesys Widgets is common to Genesys Cloud and Genesys Engage.
Of course, you'll need to manage the update of widgets (new versions) yourself updating the files on your web server.
