I would like to ask if it is possible or is there any way to change the parameters or values that appear when an interaction is entered from web messenger as shown in the attached image.

Hi - for now the only way to show the End-User's name in that field is to enable Authenticated Web Messaging, as that will update corresponding attribute on the conversation. For now, even if you were to update the corresponding External Contact record with customer's name, that would not be visible on the Queue Activity view. See these Ideas for voting:
