Hello,
It is not possible at this time to change the default agent icon in Widgets v2.
What is currently possible is to configure an agent alias and a personal image, for each of your agents.
This is done in the PureCloud - Admin - People & Permissions - People, selecting the person/agent you want to assign an alias and personal image to.
