I don't have an available WhatsApp integration in my Genesys Cloud test environment - I can't try the following myself, but I was just told that the customer phone number (from whatsapp account) should be propagated into the Genesys Cloud conversation (participant's fromAddress).
So that means you should be able to access it via the Message.Message.senderAddress Architect built-in variable, in the Architect flow, before invoking/calling your bot.
