Hi, I need to know if it is possible to get the date of when the invite into genesys was sent out to a user. We can look it up under people in the GUI.. but that is such a manual process that is not practical for what we need to do.

Are you sending the invite at the time the user is created? Are you creating the user progamatically or through the UI.
If you are sending the invite at the time the user is created, you could query the audit event service for user creation events and then use that as your starting point as to when a query is sent out.
