Are we able to handle a specific behavior on MaxNoInput in VoiceBot.

For the "Ask for Intent" action it will take the "No Intent" path and there is the possibility of adding further actions there. Otherwise the rules in the flow's Event Handling 'Recognition Failure Event' section will be followed.
The 'Recognition Failure Event` include too many of any of the following: No Matches, No Inputs, or Confirmation Rejections. Recognition Failures can occur in any 'Ask For ...' action or in an '"Anything Else?" Loop' action. So it wouldn't be specifically for "MaxNoInput" behaviour.
I'd suggest submitting an entry to the Genesys Ideas Portal describing what you would like to do and why to bring it to the attention of the product owners.
