I'm trying to update the division of a current call in the flow using APIs but i couldn't find a way.
/api/v2/conversations/callbacks/{conversationId}/participants/{participantId}/attributes is changing an attribute not a divison
Set participant data action will change an attribute as well.
I believe that Divisions will be automatically set based on the division(s) of the callflows, queues, and users that are involved in the interaction. I do not think that you can modify the divisions programmatically via the API.

We have a common flow where the call can end based on some logic but we would like to update the division to add the country division as well.
Is this a Division in Genesys Cloud terminology (Divisions overview - Genesys Cloud Resource Center) or are you just wanting to attach a custom attribute to the call to indicate the country the call is associated with?

Supervisors have access based on division so it's important to update the division in order to have access to view the interactions which are disconnected before reaching an agent in the workspace.
