Is there any way to a HangUp in architect flow trigger a data action?
I wanna save the DateTime of all hangups in a flow, with the ani and some metadata..

At this moment, there is not. you could conceivably place a data action prior to the disconnect event in the flow, which would get you close to what you're looking for, but would not account for the caller disconnecting on their own (i.e. an IVR abandon).
There is a project that we are working on slated for release in 2021 that will allow for reacting to a number of events within Genesys Cloud, including the conversation disconnect event. We will be enabling the execution of general purpose workflows based on those events, which should provide exactly what you're describing.
